Greeks dine very late and enjoy open-air places during the warm summer months, even if air-conditioning is available.
In most establishments catering to Greeks, service is likely to be friendly, warm and informal; formality is only
found in deluxe restaurants where the food may be no better and more expensive. The wide variety of eating
establishments found in Athens can be characterized by certain well-defined features.
An estiatorion (restaurant) is a conventional eating establishment with tablecloths, higher prices and more formal service. A taverna is an urban offshoot of a traditional countryside eating place. The owner and family members can often be seen preparing meals and serving food, often of the best quality and value, and the emphasis is on the mezedes (appetizers) and traditional cooking. A psistaria is a barbecue-style eating place with a large spit in the entranceway where one can inspect the roast pork, lamb and chicken. Your selection is priced according to the weight. The psarotaverna specializes in fish and seafood and is almost always found by the seaside or harborside. In a psarotaverna you can find fresh fish of the day, usually the owner's morning catch.
